光荣酱油(you)(you)(you)的(de)创(chuang)始人叫(jiao)李(li)惠南,1919年他东渡日本(ben)留学,就(jiu)读于(yu)东京高等工业学校(xiao)应用化学系,他认(ren)为(wei)日本(ben)利用现代方法制(zhi)造酱油(you)(you)(you)颇为(wei)可取,遂致力于(yu)此项研究。1927年,李(li)惠南在天津北(bei)营(ying)门(men)西(xi)大(da)街创(chuang)建了(le)“宏(hong)(hong)中(zhong)酱油(you)(you)(you)厂”,后又(you)扩建为(wei)“宏(hong)(hong)中(zhong)酱油(you)(you)(you)股(gu)份(fen)有(you)限(xian)(xian)公(gong)司”,产(chan)品(pin)定(ding)名(ming)为(wei)“宏(hong)(hong)钟(zhong)(zhong)牌”。李(li)惠南制(zhi)定(ding)了(le)一套严格的(de)酿(niang)造工序,原料(liao)限(xian)(xian)用东北(bei)金元(yuan)大(da)豆和高白秋麦(mai),采(cai)用日本(ben)菌种,以我国(guo)传统(tong)发(fa)酵工艺(yi)为(wei)基(ji)础(chu),结合日本(ben)酱油(you)(you)(you)生(sheng)产(chan)技术,创(chuang)造了(le)固稀结合的(de)发(fa)酵工艺(yi),使“宏(hong)(hong)钟(zhong)(zhong)”酱油(you)(you)(you)的(de)营(ying)养成(cheng)分、氨基(ji)酸含(han)量、卫生(sheng)标准及(ji)色(se)味(wei)都比其他酱园作坊的(de)酱油(you)(you)(you)高出许多。宏(hong)(hong)钟(zhong)(zhong)酱油(you)(you)(you)以酱香浓郁(yu)醇厚,滋味(wei)鲜(xian)美(mei)绵长的(de)独特风味(wei),压倒了(le)同行,占领了(le)市场,成(cheng)为(wei)国(guo)内(nei)闻名(ming)的(de)产(chan)品(pin)。

建国(guo)后,宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)厂(chang)(chang)收归国(guo)有,“宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)”牌(pai)更名(ming)(ming)为(wei)“红钟(zhong)(zhong)”牌(pai)。宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)厂(chang)(chang)更名(ming)(ming)为(wei)光(guang)荣(rong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)厂(chang)(chang),并开创了(le)“光(guang)荣(rong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)”品(pin)(pin)牌(pai),隶属于天(tian)津(jin)副食(shi)调料公司。光(guang)荣(rong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)厂(chang)(chang)研制(zhi)了(le)国(guo)内首(shou)款(kuan)固态酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)。这种(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)中的(de)(de)无盐固态物、氨(an)基(ji)酸、糖分、食(shi)盐、全氮(dan)、总酸及比重等(deng)理化(hua)指标均达到或超过国(guo)际先进(jin)水(shui)平。在(zai)发(fa)酵(jiao)期间,各种(zhong)微(wei)生物的(de)(de)作用(yong)生成多种(zhong)人体必需(xu)的(de)(de)氨(an)基(ji)酸及多种(zhong)营养成分。由(you)于光(guang)荣(rong)系(xi)列(lie)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)的(de)(de)独特(te)风味赢(ying)得了(le)宾馆、饭店、餐饮业和消费(fei)者(zhe)的(de)(de)喜(xi)爱(ai)。“津(jin)门三绝(jue)”之一的(de)(de)天(tian)津(jin)狗不(bu)理包子(zi),多年(nian)来坚(jian)持使(shi)用(yong)宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)泡馅,据(ju)说使(shi)用(yong)宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)调馅提香味,蒸熟(shu)的(de)(de)包子(zi)不(bu)易(yi)掉底(di)。1981年(nian)光(guang)荣(rong)特(te)号酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)被评为(wei)商业部优质(zhi)产(chan)品(pin)(pin)和市优产(chan)品(pin)(pin),1988年(nian)宏(hong)(hong)(hong)(hong)钟(zhong)(zhong)酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)、光(guang)荣(rong)特(te)号酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)、光(guang)荣(rong)固体酱(jiang)(jiang)(jiang)(jiang)油(you)(you)(you)在(zai)中国(guo)首(shou)届(jie)食(shi)品(pin)(pin)博览(lan)会上(shang)分别(bie)荣(rong)获金、银(yin)、铜牌(pai)奖。
